Beef: Prime Rib
Pork: Ham
Fowl: Turkey
Fish: Salmon
Shellfish: Hate them all.

Pork: slow cooked, spicy rubbed Ribs
Fowl: Duck - from hell week @ east coast grill
Fish: Ahi
Shellfish: oysters but allergery to raw shell fish stopped that indulgence

* bacon is a given, a great burger off the grill with a cold beer is a staple and a trip to Baltimore for some crabs is a must
 
Beef: Don't usually eat it.
Pork: sausages or Al pastor. drool
Fowl: Fried chicken. Especially this recipe that I used on Christmas.
Fish: Mahi mahi
Shellfish: Scrimps.
 
Beef: Prime Rib
Pork: Smoked Shoulder
Fowl: Duck (Cornish Hen rocks too)
Fish: Monkfish (wrapped and cooked in bacon for extra credit)
Shellfish: Lobsta (Extra large deep fried Scallops & Cherrystones are close second/third choices) :)
Lamb: Shoulder Blade Chops (in stew)
 
Beef: Dry aged standing Prime (as in true usda prime) Rib roast (2nd: Braised short Ribs)
Pork: Braised Pork Belly
Fowl: Duck
Fish: Pan fried fresh caught wild brook trout
Shellfish: Fried Clams (followed by: raw Oysters Raw Cherrystones)
Lamb: Leg O'lamb (smoked lamb belly)
Offal: Sweetbreads (thymus):(lamb [1] or Veal [2] )

Pork: Cochinita pibil.

Roasted suckling pig.

It's the pork equivalent of veal, and so so good.
 
Beef: Filet mignon. Honorable mention: Porterhouse.
Pork: Prosciutto de Parma. Honorable mention: dry cured capicola.
Fowl: Ostrich. Honorable mention: pheasant.
Fish: Codfish cheeks ala sashimi. Honorable mention: flounder
Shellfish: Woah. YES. Not the right answer? Lobster. Honorable mention: Wellfleet oysters.

Other notables: venison, elk, moose, bear, boar, kangaroo, emu.
The pork and shellfish need separate subcategories. I left bacon and Virginia country ham off the list. Just to much porkiliciousness for one answer.
Same with shellfish. Steamahs, scallops, mussels, other clam varieties, conch, and even shrimp...

Game meat. Partridge,deer heart, pheasant, rabbit, grey squirrel

I'm not a huge fan of raccoon, woodchuck, porcupine, red squirrel

I will be making some squirrel this summer, I will let you know how it came out.
 
Beef: Porterhouse. Tenderloin and NY Strip, plus bone for flavor. What's not to love?
Pork: Bacon Duh
Fowl: Emu the "beef" of fowl.
Fish: swordfish
Shellfish: soft shell crabs

If available I'll take any cut of buffalo over steer in the beef category.

Elk is wonderful as well.
