Jack Daniels is charcoal filtered before barreling. Legally it can't be calle d bourbon because of this process. It is Tennessee whisky.

Technically only whisky made with more than half of the grain mash made of rye is called rye. Traditionally Canadian whisky was made with this hearty grain which has a slightly peppery taste.

Actually bourbon doesn't need to be distilled in Kentucky. But the 51% corn is the key, as well as the made in the US.
