No, there were two different X-Men teams (cyclops was in both). The first one went from issues 1-93, the NEW X-Men team (the one you're reading) started with issue 94. I just looked it up, the book you got collects Uncanny X-Men #94-131, and Giant-Size X-Men #1, Annual #3. The editor's notes was probably referring to Giant-Size X-men #1, which was where the new team very first appeared.
No, Gambit was actually a much more recent character (he debuted in issue 244). That's why you never saw him in any of the X-Men movies. I think the Omni you got started with issue 94, IIRC. I don't think it goes up to 244 (though I could be wrong).
