I need a good rub

Okay, my very favorite meal, not spicy but tangy:

Cuban Churassco Steak.

Salt, pepper, garlic, oil - rub on steak and grill it.

Sauce:

Large bunch of cilantro leaves
6-8 cloves of garlic
1/4 c. vinegar
juice of one lime (you can add more to taste)
2/3 c. olive oil
1/2 c. onion

Throw everything except oil into blender and put on "Chop" but pulse it and don't over blend to a paste. You should see pieces of leaves of cilantro.

Whisk in olive oil. You can add flavor for boldness by adding more lime or cilantro. Put over the steak.

You had me at cilantro.

Salt, right before it goes in the pan. Nice, hearty coarse sea salt. Pepper if you like, but I find it overkill. No other spices need apply. Lisa's chimichurri is great on skirts, or other thinner pieces of steak that take well to marinates, but for a porterhouse, ribeye, or filet, salt is all you need. If you really need extra flavor, make up a nice batch of herb butter beforehand and let a small piece melt over the top of the steak as the second side cooks, but ymmv.
 
A perfectly grilled ribeye is my favorite meal! Cooked over charcoal with hickory chips for smoking. I just use some seasoned Adolph's tenderizer.
 
I failed. I wasn't sure how long they would last but it seems like sun to wed was too long. I had forgotten that I didn't freeze them so I didn't even get to seal them up and when I took them out last night they had started browning. So with my tummy issues I thought it would be best to not take the chance and toss em. I will go get more and try them this weekend.

Question: I purchased some steaks a couple of days ago and they’ve been refrigerated the whole time. But now the color of the meat has become darker and more brown. Are the steaks still safe?
Answer: The steaks should be fine. As the U.S. Department of Agriculture points out, it’s normal for fresh meat to change color during refrigerator storage. For instance, it’s common for beef to turn more of a brownish shade, due to oxidation.
And as detailed here, raw steak can be safely refrigerated for three to five days.
When raw meat goes truly bad, on the other hand, other signs of spoilage are usually present, including an off odor, a sticky or tacky feel, or a slimy appearance.

If they smell bad chances are they are not good...:coffee:
Did you know when chicken in a super market starts stinking they wash it in a Bleach water solution,which I find horrid..
Ive eaten some meat that had a taint to it,but Ive always washed it and cooked it Thoroughly...

It didn't smell at all. I find myself not buying meat from super markets anymore. I just go to the butcher place on my way home. Its cheaper too
