Not roast beef with pickles and mayo, it was nasty..
ok a solution...you toast the roll with cheese on one side, take it out then apply the RB, Pickles and Mayo and you get the crunchy goodness without the cooked mayo fear
 
Rare roast beef ceases to exist once you toast it.
I love rare roast beef,but what I do is toast my roll and provolone cheese first then add the rare Italian roast beef,and slobb it with xtra mayo,onions,peppers, jalapenos, and lettuce...
